The few people that follow this blog know that my youngest baby can't eat gluten. We don't know why he cant eat gluten except that it gives him a bad rash and he is CRANKY! when he eats it, so we eliminated it from our home so that he doesn't get any. When I tell people that our family is gluten free these are common responses.
OH! MY! What do you eat!
Um? Gluten? What is that?!
Oh, Poor baby
Oh that is going to be so hard for him
Oh how do you do it?
So here are a few answers to your questions Well if you have them. :) If not just skip to the fabulous recipe at the bottom. I would.
We eat whole food! You know Vegetables, fruit, lean meat, rice and we also eat quinoa (if you don't know what quinoa is google it)
Gluten is a protein found in wheat (including kamut and spelt), barley, rye, malts and triticale.
He is not a poor baby! He is so blessed and we are so blessed to have him. God made him the way he did for a purpose. We may not know why but I believe is blessed and he is designed perfectly because he was knit together in his mothers womb and he is fearfully and wonderfully made by our creator.
This may be hard for him? But he is one and he will grow up eating gluten free so in my opinion he will be used to it. Maybe I am wrong we shall see.
How do I do it? This is probably the most asked question I get. My thoughts are How do I not do it? I cant let my baby suffer with a horrible rash and a tummy ache all the time can I? It was a little difficult at first but I am having so much fun creating and trying new recipes. So How do I do it By Gods Grace and a willing to learn heart and attitude and a desire for my baby to eat healthy and feel good! I do it because I must and I love him with all of my heart.
So on with the recipe so you can see that he is not deprived. :)
Heavenly Oatmeal Cookies
1 cup sorghum flour
1/4 cup potato starch
1/4 cup millet flour
1/2 tsp xanthum gum
1tsp. salt
1tsp baking soda
1 cup coconut oil
3/4 cup brown sugar
3/4 cup Stevia in the Raw
2 flax eggs (2 TB ground flax meal and 6Tb. water)
2 cups oatmeal
Mix the flax meal and water together to soak while you mix other ingredients.
Preheat oven to 350 degrees.
Whisk together all dry ingredients including sugars. Then add flax eggs and coconut oil. Then stir in oats. If it seems to dry add a little extra water. Then scoop onto baking stone and bake 10-15minutes.
